Baking cakes is like arts and crafts, you have to have the right techniques and patience to make it work. Just like in gardening, you have to have the "green thumb" to grow some exotic flowers.
My experience in baking is not been really good. A wanna be baker like me finds it hard to bake cakes that even my family might love it. I made several mistakes, wasted time and money and just made a mess. But over
the years, I learned from other bloggers what I have missed. First, simple things as taking out the eggs and butter from the fridge a day or two before you bake a cake and to allow it to reach room temperature. Do you know what I usually did? You probably did it too. Yeah, just take out the eggs and butter the same day l' m baking and melt the butter in the microwave, the most convenient way. Seriously, taking time to take out the eggs and butter a day or two and have it at room temperature makes a difference. It makes fluffy layers and sometimes need to be extra careful to remove each layer from the cake pan without having the layers fall apart.
Second, when using a cookbook, for example, the instruction says to bake at 375 degrees Fahrenheit for 1 hour and 30 minutes. What I usually will do is set the timer in the oven and leave. Then wait, come back and check after the timer went off. It is important to remember that each oven varies in heat distribution. It is a good practice to check the oven 10-15 minutes before the intended time, in order to know if whether you need to make any adjustment in time or not especially if it's your first time baking that particular cake. It is a good idea to take note on how long it takes to bake each kind of cake. So, next time you can just set the timer and leave. These are some simple things that I really missed in baking a prize winning cake.
